Ingredients
  

  • 3 medium potatoes
  • 1 egg
  • ½ tbsp salt
  • 1 tsp black pepper
  • ½ carrot
  • 2 ½ tbsp mayo
  • 3 tbsp stick butter
  • 3 tbsp milk or heavy cream

Instructions
 

  • Prepare the Potatoes and Egg: Heat up a medium-sized pot of water. Cut the potatoes into halves and boil them, along with the egg, for about 10-12 minutes with the skin on.
  • Drain and Cool: Drain the potatoes and let them cool. Peel the skin from the potatoes and the shell from the egg.
  • Combine Ingredients: Add the peeled potatoes and diced egg into a bowl. Dice up the carrot and add it to the bowl.
  • Create the Creamy Mix: Incorporate the salt, black pepper, mayo, stick butter, and milk (or heavy cream) into the bowl. Gently combine all the ingredients, avoiding over-mashing to maintain a chunky texture.
  • Chill and Serve: Refrigerate the potato salad for the best results. Serve chilled and enjoy this delightful, creamy potato salad as a side dish or a standalone treat!
