Guyanese Duck Curry
Ingredients
- 2 lbs. duck cut into pieces
- 2 tablespoons curry powder
- 1 teaspoon ground cumin geera
- 1.5 teaspoons garam masala or ground masala
- 1 teaspoon turmeric powder
- 2 tablespoons vegetable oil
- 1 large onion finely chopped
- 4 cloves garlic minced
- 1 tablespoon grated ginger
- 2 tablespoons green seasoning
- 2 tomato cubes
- 1 small fresh tomato chopped
- 1 cinnamon stick
- 3 Wiri Wiri peppers chopped (adjust for heat preference)
- 2 large potatoes peeled and cut into chunks
- 1 tablespoon flour
- 2 sprigs thyme
- 3 cups water
- Salt to taste
- Fresh parsley or green onions for garnish
Instructions
- Prepare the Duck: Coat duck pieces with flour for tenderizing. Rinse off the flour, then let it sit in a strainer for 10 minutes.
- Flavor the Duck: Mix duck with 1 tablespoon curry powder, a tomato cube, salt, thyme, green seasoning, and a cinnamon stick. Let it marinate for at least 30 minutes or overnight.
- Create Curry Paste: Mix ground cumin, remaining curry powder, garam masala, turmeric powder, green seasoning, a tomato cube, chopped Wiri Wiri peppers, and thyme in a bowl.
- Cook the Curry Paste: Sauté onions, garlic, ginger, and 1 chopped Wiri Wiri pepper. Add the curry paste, cook for 2 minutes, then add water and cook for another 3 minutes.
- Cook Duck and Potatoes: Add marinated duck, cook for 5 minutes. Add chopped fresh tomato, cook for another 10 minutes. Add potatoes, mix well.
- Let it Simmer: Bring to a boil, then simmer for 40–60 minutes until duck is tender, and potatoes are cooked.
- Adjust Flavors: Taste and adjust seasoning for salt, pepper, and heat.
- Enjoy: Sprinkle fresh parsley or green onions on top.
