Prepare the Duck: Coat duck pieces with flour for tenderizing. Rinse off the flour, then let it sit in a strainer for 10 minutes.
Flavor the Duck: Mix duck with 1 tablespoon curry powder, a tomato cube, salt, thyme, green seasoning, and a cinnamon stick. Let it marinate for at least 30 minutes or overnight.
Create Curry Paste: Mix ground cumin, remaining curry powder, garam masala, turmeric powder, green seasoning, a tomato cube, chopped Wiri Wiri peppers, and thyme in a bowl.
Cook the Curry Paste: Sauté onions, garlic, ginger, and 1 chopped Wiri Wiri pepper. Add the curry paste, cook for 2 minutes, then add water and cook for another 3 minutes.
Cook Duck and Potatoes: Add marinated duck, cook for 5 minutes. Add chopped fresh tomato, cook for another 10 minutes. Add potatoes, mix well.
Let it Simmer: Bring to a boil, then simmer for 40–60 minutes until duck is tender, and potatoes are cooked.
Adjust Flavors: Taste and adjust seasoning for salt, pepper, and heat.
Enjoy: Sprinkle fresh parsley or green onions on top.
