How to Make Pineapple Fudge

Start by shredding a ripe pineapple to get 1 cup of juicy shredded pineapple. Combine the shredded pineapple with 1 cup of sugar in a saucepan, then slowly bring the mixture to a boil. Stir constantly to dissolve the sugar and avoid sticking. Keep boiling the mixture until it reaches the soft-ball stage, which you can test by dropping a little into cold water—it should form a soft ball.

Once the mixture is ready, remove it from the heat and stir in 1 tablespoon of butter or margarine. Beat the mixture vigorously until it becomes thick and heavy, showing that it’s ready to set. Pour it into a greased pan, spreading it out evenly, and let it cool. Once set, cut into squares, and you’ve got yourself a batch of creamy, tropical pineapple fudge!

Ingredients
  

  • 1 cup pineapple shredded
  • 1 cup sugar
  • 1 tbsp butter
  • 1 tbsp margarine optional

Prepare the Pineapple

  • Shred the pineapple and measure out 1 cup.

Cook the Mixture

  • In a saucepan, add the shredded pineapple and sugar. Bring the mixture to a boil over low heat, stirring constantly until the sugar is dissolved.

Form the Fudge

  • Continue boiling the mixture until it forms a soft ball when a small drop is placed in cold water. (Test by dropping a bit of the mixture into cold water and check if it holds shape.)

Finish the Fudge

  • Once the desired consistency is reached, remove the pan from heat. Stir in the butter and beat until the mixture becomes thick and heavy.
