  • Prepare the Eggplant: Cut small slits into the eggplant and insert the garlic cloves.
    1 large eggplant, 2 cloves garlic
  • Roast the Eggplant: Roast over an open flame, in the microwave for about 20 minutes, or in the oven until soft.
  • Mash the Eggplant: Once roasted, slice the eggplant down the middle, scoop out the flesh, and mash it with a fork.
  • Combine Ingredients: Add the margarine, salt, chopped onion, diced tomato, and chili pepper to the mashed eggplant. Mix well.

  • Serve: Serve warm with roti or bread.
