For the Dosa Batter

  • 2 cups rice
  • ½ cup urad dal split black gram
  • ½ tsp fenugreek seeds
  • Salt to taste
  • Water as needed

For the Chicken Keema Filling

  • 1 cup minced chicken
  • 1 tbsp oil
  • ½ cup onions finely chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp garam masala
  • ½ tsp turmeric
  • 1 tsp red chili powder
  • ½ cup tomatoes finely chopped
  • Salt to taste
  • Cilantro for garnish

Instructions

Make the Dosa Batter (Skip if Using Store-Bought)

  • Soak rice, urad dal, and fenugreek seeds for at least 6 hours.
    2 cups rice, ½ cup urad dal, ½ tsp fenugreek seeds
  • Grind into a smooth batter with water. Let it ferment overnight.

Prepare the Chicken Keema

  • Heat oil in a pan, sauté onions and ginger-garlic paste until golden.
    1 tbsp oil, ½ cup onions, 1 tsp ginger-garlic paste
  • Add minced chicken, cook until it turns white.

  • Stir in tomatoes, garam masala, turmeric, and chili powder.

  • Cook until chicken is fully done and the mixture is dry.

Make the Dosa

  • Heat a dosa tawa, pour one ladle of batter and spread into a thin circle.
  • Drizzle a little oil, cook until crispy and golden.
  • Place chicken keema in the center, fold the dosa over.
  • Serve hot with coconut chutney or sambar.
