Ingredients

  • 1 lb sugar
  • ¼ pt water
  • ½ pt lime juice
  • 1 small piece of spice or mace

Instructions

  • Boil the sugar and water: In a pan, add the sugar, water, and a small piece of mace. Heat without stirring, bringing it to a boil for about 5 minutes.
1 lb sugar, ¼ pt water, 1 small piece of spice or mace
  • Add lime juice: Pour in the lime juice, stir, and bring it back to a boil. Skim off any impurities that rise to the surface.
    ½ pt lime juice
  • Check for consistency: Continue to boil until the syrup thickens, and when poured from a spoon, it should spin a thread (meaning it’s at the right consistency).
  • Cool and bottle: Remove from heat and let the syrup cool before bottling. Store in a sealed jar or bottle.
