Mauby

Ingredients
  

  • 2 oz mauby bark or mauby concentrate available in most Caribbean grocery stores
  • 4 cups water
  • 1 stick cinnamon
  • 2-3 whole cloves
  • 1 star anise optional
  • 1-2 cups sugar to taste
  • Juice of one lime optional

Instructions
 

  • Boil the bark: Add the mauby bark to a large pot with water, cinnamon, cloves, and star anise. Bring the mixture to a boil.
  • Simmer: Reduce heat to low and let the mixture simmer for about 15-20 minutes, allowing the flavors to fully infuse.
  • Strain: Remove from heat and strain the liquid to remove the bark and spices.
  • Add Water: While the liquid is still warm, pour 1 cup of the Mauby concentrate into a pitcher and 5 cups of water, add sugar and stir until dissolved. Adjust the sweetness to your preference.
  • Cool and Serve: Let the drink cool completely, then refrigerate. Serve cold, and add a squeeze of lime for extra flavor if you like.

Notes

You can also adjust the level of bitterness by controlling how long you let the bark steep—longer steeping leads to a stronger, more bitter taste.
