Prep the Tamarind

  • Wash the tamarinds and remove their shells.
    4 dozen dry tamarinds

Make Sugar Syrup

  • In a saucepan, combine the sugar and water, then bring to a boil. Let it boil for 5 minutes without stirring.
    1 pint water, 4 lb white sugar

Add Tamarind and Spice

  • Add the tamarinds and spice to the pan, then continue boiling for 10–15 minutes.
    1 piece of spice

Cool and Strain

  • Remove from heat and allow the mixture to cool. Strain the syrup to remove any pulp and seeds.

Serve

  • To make the drink, add 3–4 tablespoons of the tamarind syrup to a glass of iced water. Adjust the sweetness with more sugar if desired. Serve chilled and enjoy!
