Spicy Butternut Squash Delight with Shrimp

Ingredients
  

  • 1 ½ butternut squash
  • 1 pack small black shrimps optional
  • 6 tbsp oil
  • 1 onion
  • 1 tomato
  • 3 tbsp ground garlic
  • 6 ground wiri peppers
  • 2 tbsp brown sugar
  • 1 tbsp salt adjust to liking
  • 1 small handful of chopped green onion for garnish

Instructions
 

Prepare the Shrimp:

  • Heat 3 tsp oil in a large pot on medium heat.
  • Fry the shrimp for about 6 minutes, seasoning with salt and black pepper to your liking.
  • Remove the shrimp from heat and set aside.

Sauté Aromatics:

  • Add the remaining oil to the pot.
  • Dice the onion, tomato, and butternut squash into medium or small cubes.
  • Once the oil is heated, add onion, ground garlic, and ground wiri peppers. Let it sauté until fragrant.

Introduce the Vegetables:

  • Add the diced pumpkin to the pot and let it steam for 15 minutes.
  • Periodically taste and adjust salt to achieve the desired flavor.

Mash and Fry:

  • Once the pumpkin softens, use a spoon to break it down.
  • Let it fry for another 15 minutes until excess water has cooked out.

Garnish and Serve:

  • Garnish with chopped green onions.
  • Optional: Add the previously cooked shrimp back to the pot.
