Spicy Butternut Squash Delight with Shrimp
This delectable recipe combines the rich sweetness of butternut squash with a kick of spice, enhanced by perfectly seasoned black shrimps. With every bite, savor the vibrant fusion of flavors, from sautéed aromatics to the enticing crunch of shrimp.
Ingredients
- 1 ½ butternut squash
- 1 pack small black shrimps optional
- 6 tbsp oil
- 1 onion
- 1 tomato
- 3 tbsp ground garlic
- 6 ground wiri peppers
- 2 tbsp brown sugar
- 1 tbsp salt adjust to liking
- 1 small handful of chopped green onion for garnish
Instructions
Prepare the Shrimp:
- Heat 3 tsp oil in a large pot on medium heat.
- Fry the shrimp for about 6 minutes, seasoning with salt and black pepper to your liking.
- Remove the shrimp from heat and set aside.
Sauté Aromatics:
- Add the remaining oil to the pot.
- Dice the onion, tomato, and butternut squash into medium or small cubes.
- Once the oil is heated, add onion, ground garlic, and ground wiri peppers. Let it sauté until fragrant.
Introduce the Vegetables:
- Add the diced pumpkin to the pot and let it steam for 15 minutes.
- Periodically taste and adjust salt to achieve the desired flavor.
Mash and Fry:
- Once the pumpkin softens, use a spoon to break it down.
- Let it fry for another 15 minutes until excess water has cooked out.
Garnish and Serve:
- Garnish with chopped green onions.
- Optional: Add the previously cooked shrimp back to the pot.
